Baingan (noun.) Solanum melongena is also known as Eggplant, aubergine or brinjal. It is grown all over the world and widely used in global cuisine. Aubergines are low in carbohydrates and high in fibre which helps diabetics.

In India, some of the famous recipes made from aubergine are baingan ka bharta where the purple, spongy, absorbent fruit is cooked over charcoal or direct fire and then mixed with herbs and spices.

Slightly burnt aubergine combined with ginger garlic paste, mashed with tomatoes and onion offers a delicious combination. It can be prepared into a curry or fried meals that are served along with biriyani (or pilau rice) or roti. There are many other popular recipes like stuffed brinjal, Bagara baingan masala and dahi baingan.
