Amchur (noun.) Dry mango powder is one of the most exotic spices used for flavouring several dishes. The powder is made from unripe green mangoes and is added to food and drinks to get a sour-sweet taste. It is added to curries, soups, chutneys and marinades. The souring agent in dry mango powder is just like lime juice with a slightly sweet taste. It is added to get the sour-sweet taste in foods like Gol gappa, pao bhaji masala, to vegetables like dum aloo and it can be added to biriyani or pilau rice that is cooked with masala or vegetables.
