About Fish Curry

One of the key steps in cooking fish is marinating it with an acidic marinade. Goan and Kerala style cooking involves a lot of vinegar or citrus juices but in North India mild marinades can be used. When it comes to fish, there are two types, firm and flaky. A firm big fish can take a stronger marinade for longer and the flaky ones fall apart on grill. Most fish preparations style involves sautéing fish in oil after a light marinade, and then simmering in the masala gravy.

In rural North- East India, lemon juice or tomatoes are mixed with mustard paste to prepare a strong curry base that gives a smoky pungent mustard-like taste.

Most Indo- Pakistani restaurants offer flavours seafood curries and grilled versions paired brilliantly with the aromatic spices. In India, the South Indian restaurants offer coconut fish curry made with coconut milk and local herbs.


Homemade Fish Curry

At home, yellow mustard seeds and red chilli paste can be used to prepare the curry. Before simmering the fish into the curry, marinated fish is deep-fried in oil. Some make use of Garam masala, nuts paste and a tomato yoghurt sauce to get a creamy fish recipe.
