The tangy spicy fragrant aromatic Chana curry simmered in a delicious tomato puree, rich in strong flavours is an incredibly satisfying meal. It is a flavorful, not too spicy yet extremely satisfying healthy, plant-based meal often ordered by families for breakfast, lunch or dinner.

There are multiple versions of the recipe found in different parts of the world. The one served by top restaurants are mostly spicy, racy, and are given with Bhature (or rice), pickles, salad and curd. The dish is enjoyed all over the world and is known as one of the introductory meal to the Indian and Pakistani cuisine.
 
There are many different ways in which Chana masala can be prepared where tender chickpeas are simmered in tomato base, flavoured with Indian spices, amchur powder (grounded raw mango), coriander, cayenne, garam masala, turmeric, black pepper and salt that is served on a foundation of greens and red salad, decorated with lemon wedges, couscous and served with polao rice and aromatic yoghurt.

About Chana masala
One can have multiple variants of the chana masala in global cities like Bangkok, Rome or Istanbul. The deviations include local herbs where garlic and ginger paste can be mixed with cayenne, Serrano Chile and cooked with boiled chickpeas for few minutes to get spicy gravy. The spicy chickpeas are a delicious recipe, sometimes, served with grilled fish, chicken, or vegetables.

Traditionally, the dish was made in India and Pakistan as chholay or chole masala, the soupy creamy chickpeas garnished with chillies, onion, garlic, fresh cilantro leaves.

How to serve?
The final dish is garnished with minced cilantro (optional) or vegan plain unsweetened yoghurt and served with basmati rice or roti.
