About Black Eyed Beans
Traditionally, the black eyed beans were found in Greece and Caribbean cuisine. In Greece, it is called mavromatika where the method of preparation of the dish is similar to the Indian style of cooking. 

In the European cuisine, it is prepared with bacon or meat to get a buttery, garlicky taste where the final version is sauteed with cayenne pepper sugar and the vinegar to get a sweet-sour tang.

Black Eyed Beans curried vegetarian recipe is lightly-spiced but the Indian restaurants may prepare it in strong aromatic spices and add cream at the end of preparation to get a glossy tadka.

In south Indian restaurants, it can be made in coconut curry and coconut oil.

Homemade Black Eyed Beans
A selection of a wide range of aromatic spices can get a strong tadka of black eyed beans but it can be prepared with light spices in Indian homes to get a personalized flavor.

To prepare it, one has to soak the peas in water overnight and saute it in curry paste. You can add asafetida, cumin, green chilli, Kashmiri red- chilli powder and other ingredients as per taste to the boiling peas until you get a tenderized version which can be garnished with the wedges of lemon and served with roti or rice.
