The delicious spicy Okra made with the perfect blend of spices and authentic herbs is a famous recipe loved by all. The dish is made from the delicious tossing of the cut vegetable Okra with a blend of varied spices like powdered mongo and cumin (jeera).

Basic Information
The fried version can be made like a smoky, spicy, flavoursome recipe. It is a jiffy quick meal often made in north Indian homes as a dry vegetable; nevertheless, it can be made into a vibrant and tender gravy dish one, plated with a burst of flavours and cream.

About Bhindi
Fried okra is a very popular dish. Okra can pre-cooked, roasted or grilled or added to curry dish with acidic ingredients like tamarind or tomatoes to reduce the sliminess.

Okra pods are mucilaginous which makes it slimy when cooked. Some folks do not like this texture and adding salt towards the end of the cooking process, or soaking cut vegetables in vinegar for half an hour before cooking reduces the sliminess. Fresh bhindi okra should not be washed after cutting because water increases the sliminess and stickiness of the vegetable.

Restaurant Bhindi

Dry Bhindi is a crispy delicacy prepared with cornmeal or seasoned flour mixed with spices like cayenne pepper, cumin and chilly. Bhindi curry made with tomatoes, smoked paprika and cayenne, is often served by Indian dhabas / restaurants.

Some restaurants cook it with mutton where they use stored cupboard spices along with puréed onions, garlic and ginger to create an authentic flavour which can be made with tender lamb curry or meat.

Homemade Bhindi
At home chopped bhindi and slit green chilli are sauteed in oil on medium heat and when the bhindi shrinks and is no slimier or sticky, salt and herbs are added.

How to serve?
Bhindi / Okra have a high nutritious value and of course amazing taste. Ladies finger masala dry is an ideal accompaniment with chapati in the form of a sabzi. It can be served with steamed rice, dal and ghee for lunch or dinner.
