About the Indian Tori Subji Slough

Tori or Ridge Gourd (also known as Turai and Chinese okra) is mildly sweet and has ridges on its skin, which are peeled before cooking a curry. It's easy to digest, cooked in very little oil, and relished even by kids.

In the past, it was specifically prepared for those who had digestive or other health issues. Grated coconut is used in some recipes that retain its natural sweetness, making it a lightly spiced, wholesome meal.

It is often less spicy, but it can be cooked with chopped tomatoes, onions, ginger, and garlic to add a sweet-tangy flavour. 

At the same time, many vegetables can be added to the Tori Subji recipe, such as zucchini, bell peppers, and sweet corn, to make a mixed-vegetable version.

In the northern regions, multiple variations of Tori Subji dhaba style are made with lentils and served at restaurants. The cut vegetables are boiled with lentils and spiced with tangy tadka into a smooth, soupy blend, making it a perfect, wholesome meal for family dinners.


Homemade Tori Subji UK
