What veg can go in a curry ?

Most green vegetables like cauliflower, cucumber, broccoli florets, tomatoes, potatoes, peas, spinach and capsicum can be cooked raw into a karahi curry. These vegetables can be added one at a time or as a combination of two or more types of vegetables. 

Simple potato curry is made with potatoes and tomatoes cooked in a soupy mixture of curry.  One can add garam masala or curry powder and ginger garlic paste or other herbs in the soupy preparation to get a unique flavour.

Indian veg curries are also made into the kind of kofta or Chinese Manchurian style where the vegetables are coated with gram flour or cornflour and then fried in a pan ahead of being dipped into tomato soup or curry.
